Store bought corned beef normally has a lot of salt added and the package will say how much solution is added to your beef. Generally cooking corned beef is done by boiling it in water. Doing so will remove some of the excess salt that has been added. Since we are smoking it, we will need to remove some in advance.

I’m a huge fan of the Memphis Dust rub but after using it for so long, I wanted something slightly different. Not too much but something with a little different flavor profile. I decided to incorporate some lemon and remove the ginger. I also tweaked some of the ratios. What I produced turned out to be a great tasting rub that goes on both pork and chicken.

Ingredients

  • 1 cup brown sugar
  • ΒΌ cup sugar
  • 3 tbsp onion powder
  • 2 tbsp garlic powder
  • 2 tbsp lemon pepper
  • 2 tbsp smoked paprika
  • 2 tbsp lemon pepper
  • 1 tbsp chili powder
  • 1 tbsp salt
